Description
Sweet potatoes are a bright orange root vegetable, and are similar to butternut squash, parsnips, swede and turnips. They do count as one of your 5 a day because they have less starch than ordinary potatoes.
They have the following nutritional benefits:
- Excellent source of vitamin A in the form of beta-carotene;
- Very good for providing manganese, copper, and pantothenic acid;
- Full of vitamin B6;
- Good source of potassium, dietary fibre, niacin, vitamin B1, B2 and phosphorus.
